15 Stamford by Alvin Leung is all fired up to celebrate its first Easter weekend in Singapore. The iconic restaurant, which serves up soulful all-Asian specialities skilfully rendered alongside steak house classics, has a few delightful surprises up its sleeve as befits the upcoming family-friendly occasion.

The tradition of Easter dining was the inspiration to present an exquisite line-up of both traditional and non-traditional dishes, complemented by an optional free-flow of Taittinger Champagne and cocktails such as gin & tonics and Bloody Marys.

Guests can look forward to eight live stations, from enticing chilled seafood and sashimi to a farm cheese and charcuterie table, stacked with fresh-shucked oysters, Chardonnay-poached prawns and cold cuts of Black Forest ham and jamon Iberico. Traditionalists will insist on their freshly cooked breakfast, featuring cooked-to-organic eggs, country bacon, artisan yogurt and Danish pastries.

At the heart of the restaurant is its authentic wood and charcoal fired grill, from which guests will enjoy the centrepiece of charcoal roasted whole lamb, carved and served with mint tabbouleh. Grilled Tomahawk steak, glazed gammon ham, Cantonese roasted Irish Silver Hill duck and German sausages will also be freshly grilled and presented.

For many, the restaurant is synonymous with chef Alvin Leung’s homage to Asian cuisine, and you can look forward to these as well – including the 72-hour U.S. beef short ribs rendang, Hokkaido scallop with adobo butter, and three-style corn salad, heirloom tomatoes and Hong Kong Pat Chun Vinaigrette. These are complimented by charming morsels of dim sum, including wok-fried ramen with seafood and homemade X.O. sauce.

To whet the appetite further, ‘Berthold & Frieda’ European dishes include smoked fish, marinated stone crabmeat salad, devilled eggs with beetroot and Swabian potato salad, washed down by a cauliflower and potato velouté soup with toasted hazelnut.

Last but not least, tuck into the variety of sweets from around the world. Hot cross buns, Portuguese egg tarts, mango kueh lapis and an Easter rice pudding bring comfort as well as joy.

With the beautifully restored heritage arcade of The Capitol Hotel Kempinski Singapore decked out to commemorate the season, a day-long roster of festive entertainment is complimentary for all diners attending the Easter Brunch at 15 Stamford. In the restaurant itself, a live music band will be on hand to accompany the guests.

Younger guests can look forward to egg-celent games such as the egg dance and egg and spoon race, while old and young alike are invited to deck out with face and body paint sessions.
