The guest chef for this year’s extraordinary culinary adventure is none other than Chef Max Stiegl, who was crowned Gault & Millau Austria’s Chef of the Year in 2021 and has a reputation as the “Kitchen Anarchist,”– a culinary disruptor who redefines tradition with bold innovation.
Chef Stiegl’s journey to culinary stardom is extraordinary. He became the youngest chef ever to earn a Michelin star when he was 19 years old. With a deep-rooted culinary heritage and a dedication to sustainability, he’s recognized as one of the world’s most innovative and creative chefs. Chef Stiegl is renowned for his multi-course offal menus, where nothing goes to waste in his kitchen. In winter, Chef Stiegl hosts the Sautanz, an extraordinary food festival celebrating the pig in its entirety. During the exclusive event at Andaz Singapore, Chef Stiegl will present a five course tasting menu aptly named “An ode to Austria” that features his iconic dish, “Chicken In The Bubble.” Picture succulent chicken, expertly cooked within a pig’s bladder, and stuffed with decadent delights like duck liver and truffles beneath the skin. This five-course culinary extravaganza promises to delight adventurous palates.
The menu showcases a delightful twist on Austrian classics, including the chef’s Ratatouille, a harmonious blend of Viennese vegetables; “Oafish” a traditional Austrian dish with cauliflower and poached egg; and “Ritschert“, a hearty stew accompanied by smoked eel. For dessert, savor unique flavors with a Viennese Bread Soufflé, elegantly served with orange liqueur and corn ice cream.
