If you regularly host wine nights at your place, you would probably face the perennial issue of choosing between a good unopened bottle of wine, or what’s open in the fridge that you need to finish up.

Well, with Coravin’s Pivot Wine Preservation System, you can serve your guests whatever bottle they would like to drink, rather than rushing to finish the half drank bottle sitting in the fridge. The pivot system is different from its more famously known needle-based counterpart in that

The Pivot has three essential parts: a pivot stopper, pivot device and a pure argon capsule. Combined together, the system keeps your favourite wines and keeps them in a freshly opened condition for up to four weeks.

It sounded unbelievable until we did a taste test with a bottle of Le Ragose Amarone Della Valpolicella Classico Riserva DOCG 2011. The table struggled to guess which glass was from the bottle opened two weeks ago and which glass was from the bottle that was freshly opened. Both glasses tasted equally full bodied and sweet. The fruity aromas didn’t disappear, nor did the flavours turn dull and flat!

Now in case you’re wondering whether you can only drink corked or capped bottles, the Pivot System comes with its own stopped making it work with any still wine regardless of closure type: natural cork, synthetic, glass, or screwcap. Simply open the bottle and immediately insert the Pivot Stopper. As you pour the wine out, 100% pure Argon gas is released into the bottle to replace the poured wine. This prevents oxidation of the remaining liquid that will cause your beloved bottle to turn flat or even bitter.

Given that the Pivot system is the most gas efficient across the different systems, each Argon capsule will last you 20 pours of 150ml – easily taking you through 3-4 bottles. If you hear a ‘pssss’ sound as you try to pour out wine, it means that you are out of gas. After finishing a bottle, simply run the Pivot device through water to remove the wine residue and leave it to air dry till your next wine night.
