Let the Indian Spices Melt your Taste Buds

I personally love Melt Café at Mandarin Oriental, Singapore for its luxurious buffet lines of cold shucked premium seafood items such as fresh Boston lobster, seasonal oysters, tiger prawns, white clams, green-lipped mussels, and mud crab.
To turn up the heat, Melt Café recently hosted Chef Arun Mathur from Oberoi Hotels & Resorts for a five-day exclusive guest chef event last 17 to 21 August 2022.
I enjoyed the Duck Curry slow cooked with fennel and curry leaves that was incredibly tender and an unusual meat curry to see; another highlight of the night is the classic Pani Puri that unleashes a burst of sweetness into your mouth as you sink your teeth into its crisp exterior; and lastly is the Rose Cheesecake which was an interesting take on a classic western dessert.
Of course, the sumptuous feast would not be complete without a drink or two – with a twist of India. The Pandan Gin & Tonic goes exceptionally well with the heavy curries and refreshes your palate for second servings. Just a whiff of the pandan fragrance freshens you up from the heavy flavours.
If you missed it, don’t fret. Melt Café will likely bring another guest chef back. In the meantime, the usual buffet spread at Melt is worth bring the family out for!
