Riding on the unmistakable buzz and sounds of the first F1 racing season to take place since 2019, InterContinental Singapore is celebrating the racing season with an exclusive three nights only, four-hands collaborative dinner with Singapore-based Chef de Cuisine Davide Giacomelli of LUCE by Davide Giacomelli and Guest Chef Nelly Robinson of famed nel. restaurant in Australia alongside a wine pairing menu complemented by Singapore’s finest wine distributor PIVENE.

The collaboration between both renowned chefs has resulted in the curation of a stunning six-course menu that highlights each of the chef’s strengths and their own unique culinary flair – Chef Davide who is known for his simple yet refined dishes; and Chef Nelly’s reputation for creating high quality degustation tasting dishes that is sure to impress guests.

Diners will begin their evening with the Tartare di Wagyu Alla Carbonara, a bite-sized hors d’oeuvre made with seasonal ingredients consisting of Diced Wagyu Beef Tartare, Carbonara Espuma and Crispy Guanciale that is sure to promise a bite packed full of rich flavours that will give the guests a preview of what to expect for the next few courses.

Continuing the gastronomic meal, guests will be served the Sotto il Mare, a refreshing appetiser of poached spanner crab cooked at 64 degrees, precisely for 10 minutes and plated to reflect the design of a rockpool. The delicate protein is paired with Macadamia, Mint and Sea Bubbles for a refreshing flavour profile alongside a glass of Dominique Portet Fontaine Rose Vintage 2020, a pretty, light salmon pink rosé with a gentle, creamy mouthfeel, and fine natural acidity that balances out the palate with a pleasing, aromatic taste.

The light pairing of the crab and rosé wine will be the perfect entryway that leads into the first main course of the night, Farro, Gamberi Imperiali e Pesto Verde– a unique risotto-like dish which utilizes farro slow-cooked in a rich king prawn infused Stock, further elevated with a secret homemade pesto, that gives a light herby flavour with hints of savoury richness from the cheeses and pine nuts used in Chef Davide’s specialty pesto mix. The risotto is then topped off with plump roasted king prawns and paired with a glass of Broglia Gavi di Gavi Villa Broglia Vintage 2020, a wine known for its fresh fragrance, fruitiness, with undertones of white flowers and a hint of almonds, making it the perfect wine for all types of Mediterranean dishes, especially those that uses seafood.

Next up would be the Spezia Del Mare, Kingfish tandoori flamed with smoked yogurt and lobster – a dish inspired by Chef Nelly’s favourite childhood memory of Britain where he used to devour endless servings of smoky tandoori chicken with his parents. Marinating it for 48 hours in tandoori spice, the Kingfish is smoked together with yogurt and served with puffed lobster crumbs. The dish is paired with a glass of Passopisciaro Passorosso Vintage 2018, a remarkable wine that transports diners to the ashen slopes of Etna with a display of crushed rocks, black raspberry, wild brush herbs and hints of smoke that will blend well with the robust and smoky flavours of the tandoori dish.

The dish is then followed by Manzo Maturato, Ostriche, Funghi e Salicornia, that involves dry-aged Wagyu beef cooked in a red wine reduction sauce with oyster and borage dressing topped with glasswort and raw mushrooms – a delicacy that goes perfectly with a glass of plush, full-bodied Head Red Shiraz Vintage 2020.

To conclude the evening on a high note, guests will enjoy an irresistible dessert combination of delectable peppermint and chocolate forest, also known as Foresta di Singapore– a sweet treat inspired by Chef Nelly’s visit to the garden city as a child, where he was blown away by the vast woodlands and greenery.
