Following his five-year long hiatus, Malaysian celebrity Chef Wan makes his long-awaited return to Singapore this year with a fine selection of royal Malaysian cuisine at Ginger at PARKROYAL on Beach Road, graces the local culinary scene with a spread of delectable dishes fit for a sumptuous feast.

Available for a limited time only, Chef Wan presents five heritage dishes served in the various Palaces of Malaysia. Get a taste of nostalgia as he introduces his grandmother’s rendition of Kerabu Mee Hoon Nyonya. These dishes are available as part of the buffet spread at Ginger, from 5 March to 23 April 2023.

Kerabu Meehoon Nyonya

For starters, whet your appetite with the Kerabu Meehoon Nonya, a dish inspired by Chef Wan’s late grandmother’s recipe. The tangy and spiced rice vermicelli salad is an amalgamation of various fragrant spices, including fresh kaffir lime leaves, lemongrass, shallots and ginger flower. Juicy fresh prawns, dried shrimp, belacan and fish sauce are tossed together with the vermicelli and spices resulting in a savoury, sour yet spicy flavour profile.

Laksa Johor

Tuck into the hearty Laksa Johor, a unique iteration of laksa which uses spaghetti noodles instead of the usual laksa noodles. Slurp up the rich broth steeped with prawns and a myriad of classic Malay ingredients, such as galangal, asam gelugur, garlic and more. Chef Wan also incorporates mashed mackerel fillet into the coconut cream-based broth, giving the dish an added depth of flavour. As a final touch, the dish is topped with Vietnamese mint, fresh mint leaves, kalamansi lime and served with sambal belacan on the side.

Rendang Udang Galah Perak

Meanwhile, savour the robust flavours of the Rendang Udang Galah which hails from Perak, the middle of the Peninsular. Sink your teeth into the juicy king prawns, marinated in a mouthwatering coconut-based gravy infused with aromatics such as ginger, lemongrass, dried chilli, turmeric leaves and shallots.

Kuzi Kambing Johor

Also hailing from Johor is the Kuzi Kambing Johor, a dish of mutton marinated with more than 20 ingredients. A mix of aromatic spices is wok-fried, before adding mutton and tomato puree. Yoghurt is also stirred into the gravy to give the dish a touch of sweet and sour flavours. The dish is then served together with crisp shallots and fresh kaffir lime leaves.

Ayam Percik Kelantan

Finally, savour a taste of Kelantan with the Ayam Percik Kelantan. Hailing from northern Malaysia, the spice-laden dish delivers a kick as it is cooked with red chillies. For a robust flavour, the chicken is also marinated with various aromatics, including turmeric, candlenut and Fenugreek seeds. The marinated chicken is then meticulously oven-grilled to maintain its juiciness yet giving it a smoky char.

The five dishes are available as part of a buffet package, starting from S$55++ per pax. Diners not only get to savour the dishes by Chef Wan, an array of hotel buffet dishes at Ginger are also included. The diverse buffet selection offers a sushi station, salad bar, barbeque roasts, and array of local specialty dishes, desserts and more.

Fans of the celebrity chef can also sign up for an exclusive VIP meet and greet session with Chef Wan. At S$168 per ticket, the highlight of the meet-and-greet session is the live cooking demonstration from Chef Wan, where fans can watch as he prepares the special dishes up front. Savour the signature dishes and Ginger’s IFTAR buffet spread as included in the VIP session.
