The World Gourmet Summit (WGS), in collaboration with Pacific Northwest Seafood and Angliss Singapore and a few notable restaurants around Singapore to spread the word to diners about sustainable fishing and the various health benefits from seafood found in the US!

From now until 31st October, selected WGS partner restaurants Holy Crab, Kucina Italian Restaurant, Grissini, Opio Kitchen and Bar, Punjab Grill, Tamarind Hill and The Malayan Council will be showcasing specially curated menus that highlight the premium quality seafood ingredients from the Pacific Northwest! The star seafoods will include Black Cod, Dover Sole, Rockfish and Sablefish that will be incorporated into various dishes to tantalize and titillate the palates of local diners!

At Holy Crab, a renowned seafood establishment that is nested at the Capitol Arcade whose head chef Elton Seah has incorporated the Pacific Rockfish and Pacific Dover Sole into two dishes that have been carefully fine-tuned to fit the local palate!

Rockstar

The Rockstar involves a deep fried Rockfish that is lightly cooked again to reheat the protein and then served with their in-house sauce, topped with spring onions and crowned with a special chilli star that is made using chilli flakes, soybeans, sugar that is then pressed into a mold and slowly grilled to solidify itself into a star shape! The resulting double-frying method showcases the delicate and mild nutty flavour of the fish that is extremely light on the palette due to the sauce and goes well with the rich spicy taste of the chilli star!

Dover Grilled Rojak

The Dover Grilled Rojak is a reimagined version of a local stingray dish that uses a Dover Sole being slow grilled while being marinated with an in-house rojak paste in banana leaves! However, the dish itself leaves a little to be desired as the dish is missing a crunchy texture that most locals are used to and is missing a little bit of a char or roasted taste to it. Perhaps the dish would be better if the protein would be quickly roasted over high heat just to get a little of the sear into the fish to give it more of a bite!

The Pacific Northwest Seafood promotional menu by Chef Elton from HolyCrab is priced at S$19.90 ++ each & Bundle offer for 2 different flavour fishes at S$36.00 ++. The promotion runs till 17 October or while stocks last.
