Peruvian powerhouse couple Virgilio Martinez and his wife Pia Leon is set to headline the third instalment of Mandala Masters from 5 August to 30 October at Art at National Gallery Singapore.

This will be the first time that the pop-up will be held outside the members-only club – Mandala Club after two successful, sold-out culinary residencies headlined by chefs Mauro Colagreco from Mirazur and Gaggan Anand. For the third instalment, the chefs will present a totally new dining experience with MASL (Meters Above Sea Level).

The couple is behind the famed Peruvian restaurants Central (No.4 in the World’s Best Restaurants 2021 list, and No. 1 on the Greatest Latin America’s Best Restaurant ranking from 2013 to 2021), Kjolle, and the remotely located MIL located 4,000 meters above sea level in the Peruvian Andes. They are also Latin America’s best chefs.

Being the couple’s first time working together in a project of this kind outside of Peru, they will be presenting 8-Course Lunch, 11-Course Dinner tasting menus of completely new dishes developed exclusively for MASL in order to present the chefs’ signature interpretation of Peru’s vastly biodiverse landscapes and ecosystems to Singapore.

For this installment, the chefs have designed MASL as an immersive journey through Peru’s varied natural landscapes and rarely seen or tasted indigenous ingredients allowing guests allow guests to experience ingredients from altitudes ranging from -10 masl to 3,850 masl. Each dish is unnamed but will rather be listed according to its altitude presented in stunning textures and spectacular splashes of colour.

“To us, meters above sea level refers to the way we connect with the environment in Peru. Bisected by a major mountain range, Peru’s unique geography requires us to look at the world vertically in order to access the origin of thousands of our ingredients.”

MASL (Meters Above Sea Level) will run from 5 August until 30 October 2022, serving from Tuesday – Sunday. Limited seats per seating.

Lunch (8-Course, Wednesday to Sunday) is priced at S$320++ and dinner (11-Course, Tuesday to Sunday priced at S$448++.

A Latin American-inspired cocktail pairing curated by the Peruvian Head Bartender Alonso Palomino is also available from S$188 ++ (Lunch) and S$250 ++ (Dinner).
