Haven’t decided where to celebrate this coming deepavali?
No further introduction is needed for Raffles Hotel Singapore’s Tiffin Room, one of Singapore’s grandest and popular go to restaurant for Indian cuisine and easily one of the popular place by many to celebrate this special occasion.
For this year’s Deepavali menu, award-winning Chef Kuldeep Negi have specially curated a set menu which starts with popular Indian snack, Dal Pakori from Delhi and Fafda Chaat from Gujarat, served with lentil dumplings, crispy chickpea bread complemented with tamarind and mint chutney.
Next will be the Tandoori Red Snapper which is specially procured from the Malabar coast in India, the snapper is marinated in a blend of spices before being grilled and is served along with spicy tomato chutney, plus cheese marinated tandoori broccoli to complete that umami taste. Despite being cooked over an intense fire in a clay oven, the snapper remains firm with soft texture. This is our favorite dish from the set!
In typical Tiffin Room style, you will get to enjoy your main courses in their elegant tiffin boxes, with elegant spread of Murgh Dhansak, a combination of tender and firm boneless chicken leg cooked with pineapple and Indian spices. The Chettinad Prawn Biryani, featured a combination of light and fluffy basmati rice, juicy prawns, saffron, mint and coriander leaves. Some of the main courses included in the tiffin boxes comprise of the Mahi Musallam which uses Japanese sea bream cooked in almond and cashew nut gravy and Methi Gosht, a well prepared lamb saddle with fenugreek, spinach curry and spices.
End your meal on a sweet note with Date Halwa, a unique tasty indian sweet recipe made with grounded dates; popular royal dessert Shahi Tukra made with bread pudding and creamy saffron milk and Mithai, Besan Gulab Burfi and Amrood Kaju Katli which are handmade confectionary of guava and cashew nut, and yellow lentils.
The feast doesn’t end here, bring home the Tiffin Room’s exceptionally curated Diwali sweet treats for your loved ones. Made from premium ingredients including fruits, nuts, and spices the 15 pieces Mithai box present a wonderful melange of festive North Indian specialities such as the Burfi, which comes in two flavours and Besan Gulab Burfi, imbued with rose petals and saffron, as well as Dodha Nariyal Burfi, enriched with desiccated coconut.
