Hot! Award-Winning Chef Mauro Colagreco Is Opening His Newest Italian Concept In Capella Singapore this 15 June!


Chef Mauro Colagreco is set to open his newest dining concept, Fiamma in Singapore at Capella Singapore!

Fiamma embodies the chef Mauro’s burning passion for cooking, and is a salute to the warmth and spirit of Italy, expressed in humble luxury and seasonal beauty.

The 138-seater restaurant is designed by André Fu, which took over the resort’s former in-house restaurant’s long crescent-shaped space; one that opens out to the sheltering tree-line of tropical foliage and the South China Sea beyond. Conceptualised to convey the duality of the expected and unexpected.

The interior is divided into six layered experiences; each unique in its design and function starting from the outdoor al fresco lounge into the den, the semi-private area that is theatrically anchored by a wood fire pizza oven and enclave of wine offerings, the main dining room defined by its large, impressive, bronze-cast chandelier and view into the glassed-off kitchen, a private room for 16 and a 30-metre long terrace lined with hardwood outdoor furniture.

Hues and textures of the tropics, are reflected in the muted colour palette of earthy sand, mud terra cotta, dusty aubergine, washed oak and chiselled stone, blending seamlessly with the eclectic mix of furniture and fittings that speak of relaxed, intimate luxury making Fiamma the warm centre of Capella; a place to create new memories and connect with friends and family over hearty, comforting flavours.

Crudo di gambero rosso

Fiamma serves authentic, traditional family cuisine inspired by Chef Mauro’s Italian heritage which is translated into the restaurants repertoire of dishes such as the Crudo di gambero rosso, comprising of red prawn tartare which is inspired by a stunning variety of prawn, Gamberoni, he had discovered in the San Remo region along the coast of Northwest Italy, shortly after arriving in nearby Menton, France, to set up his now world-famous restaurant.

Of the wide variety of main courses, Chef Mauro casts focus on the Pescato Del Giorno, or Fresh Catch of the Day, which he elects to present with influences from the region of Liguria, which is known for its seafood. The fish is first grilled on the fire grill before being finished in the oven. Completing this highlight, it is served with seasonal vegetables, olives and capers, a sauce of lemon juice & fish stock, and fresh herbs.

Chef Mauro’s Dolce creations include, the classic Affogato al Café, and Semifreddo, which boasts a blend of unique textures and flavours from the frozen nougat with nuts, pistachios, fresh almonds, cardamon and seared apricots.
