Machida Shoten has released a brand new menu that focuses on four different flavours of ramen broths customers can enjoy: the Tonkotsu Shoyu, Tonkotsu Shio, Tonkotsu Miso and Spicy Miso. The new mainstays are tweaked to cater to local palates while still retaining the essence of authentic iekei (home in Japanese) ramen.

The main dishes are priced starting from S$9.80, making the restaurant one of the most affordable dining spots along Orchard Road. The four different ramen offerings come with Regular, Basic and Special options- which comes with varying toppings such as nori, chashu, spinach, tomago, corn and other ingredients depending on the customer’s preferences.

The broth for the varying bowls of iekei ramen is a perfect union of chicken, unctuous pork-based tonkotsu and shoyu sauce. The thin yellow strands of noodles will help to soak up and absorb the goodness of the broth to ensure that every bite of the noodles will be packed full of flavour. Customers will have the choice of choosing how soft or hard they want their noodles to be from three levels of doneness. Additionally, a wide variety of condiments are also available for customers to custom tailor the flavour of their broth to their liking!

Apart from the revamped ramen dishes, Machida Shoten has also introduced new lunch set options that are available on weekdays from 11am to 3pm. Order a bowl of ramen and pair it with different side dishes such as gyozas or fried rice starting from just S$3 onwards.

Despite its revamped menu, Machida Shoten’s ramen has managed to retain it’s key flavours and slightly improved on their taste without sacrificing any key aspects of it’s seasoning and made their broths less salty. What disappointed us were the lack of appetizing side dishes that were previously available on their menu such as the Shrimp fried rice or Seasoned Iberico Spareribs that were a perfect accompaniment to the main star dishes. Without them, Machida Shoten will run the risk of being a mundane ramen house that will fail to stand out from the already heavily competitive ramen industry in Singapore.
