Following up on its success last year, Marques de Casa Concha has returned with the second edition of the ‘Marques Perfect Match’. Season Two of the ‘Marques Perfect Match’ will see the return of some of last year’s participating restaurants as well as exciting new additions for an epicurean wine and dine experience.

Widely recognised as the best wines in their segment, the award-winning Marques de Casa Concha wines highlight Chile’s vast winemaking diversity. Marques de Casa Concha draws on the expertise of twelve leading Singapore chefs from a wide variety of bars and restaurants to conceptualise menu items to pair perfectly with the wines to bring its own unique and complex flavour profile to the table.

For the wine connoisseurs who want to experience the full range of what the wine label has to offer, three top-tier restaurants in Singapore have all come up with multi-course tasting menus that will take diners through a journey of the flavour profile of each course and how they each have a part to play to highlight the various wines that are paired.

Chefs Table_Omakase dish 1.2

Chef’s Table by Chef Stefan focuses on a western omakase menu of four-courses, six-courses or eight-courses is available for wine pairing with the Marques de Casa Concha Chardonnay, Merlot, Cabernet Sauvignon and Etiqueta Negra.
Diners can indulge in a unique experience as there are no signature dishes or repetition of dishes, the menu changes daily and will be curated to amplify the taste of the wines using only the best seasonal ingredients.

Four, Six and Eight course omakase menu starts from $98++ – $150++ per person.

Wine pairing with four glasses of wine: $78++ per person, Wiine pairing with six glasses of wine: $118++ per person.

The wine pairing menu will be available until the end of October 2019.

Located ‘in the sky’ at level 55 of ION Orchard, Salt Grill and Sky Bar have their full six-course pairing menu at Salt Grill & Sky Bar that consists of two featured pairing items. The Burratina packed with pickled pumpkin, persimmon, smoked tomato, toasted seeds and dressed with aged balsamic, is paired with the Marques de Casa Concha Chardonnay.

Known for their premium Australian beef, the second dish is the Westholme Wagyu, served with Jerusalem artichoke, black garlic, pickled onion and garlic flower. The prime red meat is paired with a glass of red, the Marques de Casa Concha Etiqueta Negra.

The five-course tasting menu with the wine pairing costs $258++ per person and is available until the end of October 2019.

White Grass_Seasonal FIsh

At Whitegrass, Guests can choose between a 5-course and an 8-course degustation menu that pays homage not only to the history of the produce but also to its passionate producers. Under the watchful eye of Head Chef Takuya Yamashita, featured dishes include the Stuffed Wing with Tokachi mushroom, rice and pistachio and the Seasonal Fish served with saffron, mussel and sansho butter.

The dishes are paired with the limited edition Marques de Casa Concha Chardonnay and Pinot Noir respectively. Chef Takuya celebrates the essence of each ingredient he works with, with consideration of the compatibility of both foods and wines.

Five-course dinner menu with wine pairing is priced at $246++ per person while the Eight-course dinner menu without wine pairing is priced at $336++ per person.

Smoke&Mirrors

For those who prefer to see how the wines can be incorporated into a modern tipple, Smoke & Mirrors is offering a unique take that no other restaurant or bar is offering. The Marques de Casa Concha Chardonnay and Merlot have been specially chosen to create two unique cocktails that display their versatility and personalities.

The first is “El Marques”, using the Marques de Casa Concha Chardonnay with shrub macerated with Cognac and jasmine aroma. The second is “Sirena de Chile”, marrying the Marques Merlot with single malt whiskey, cherry liquor and aqua faba.

Each cocktail is paired with 3 canapes – smoked salmon, chilled pasta and prawn with mango salsa. Offering a unique take on the fine wines, guests can take in the spectacular panoramic views of Singapore’s skyline whilst sipping on their specially curated cocktails.

A cocktail with canapes is priced at $25++ per person.

Available from September 2019 to the end of December 2019.

Dusk_Prime Angus Grilled Ribeye

For an old-fashioned meal with a view, Dusk Restaurant and Bar has leaned on the classic tradition of pairing seafood and steak with a glass of white and red wine, respectively, to thoughtfully complement the dishes. Oyster Al-Vinco Biano is a wine-poached oyster, paired with the Marques de Casa Concha Chardonnay to bring out its fresh flavours, while the Marques de Casa Concha Etiqueta Negra accentuates the succulent cut of Prime Angus Grilled Ribeye.

Oyster Al-Vinco Biano with wine pairing: $30++ per person, Prime Angus Grilled Ribeye with wine pairing: $72++ per person.

The wine pairing menu will be available until the end of October 2019.

Rabbit Carrot Gun_Beef Wellington 3

For a more casual experience, Rabbit Carrot Gun is dedicated to producing great and affordable food inspired by the best British and international cuisine, Rabbit Carrot Gun is serving up a hearty Beef Wellington to be paired with the Cabernet Sauvignon.

The wine pairing menu will cost $48++ per person, $36++ without the wine pairing and will be available until the end of October 2019.

The newly opened The Botanic draws inspiration from nature, showcasing a variety of simple dishes that showcases eclectic Asian and Mediterranean flavours. The spotlight is on the Roasted Quail, simple and tasteful, to be paired with the Marques de Casa Concha Chardonnay. Despite the rather unconventional pairing, the staff at the restaurant swears by the pairing as the light wine will amplify the taste of the bird instead of hiding it behind the veil of flavours of a rich red wine.

The wine pairing menu will cost $39++ per person, $27++ without the wine pairing and will be available until the end of October 2019.

Other participating restaurants include Mitzo Restaurant and Bar, News & Gossip, Praelum, Ristorante Luka and Wine Universe.
