1-Michelin-starred Alma by Juan Amador partners with Man Fu Yuan for an exclusive 4-Hands Collaboration in May 2025

Happening for the very first time, celebrated Cantonese restaurant, Man Fu Yuan and 1-Michelin-starred restaurant Alma by Juan Amador is collaborating to bring an exclusive “Ties That Bind” 4-Hands dinner from 8 till 10 May 2025 at Man Fu Yuan, Intercontinental Singapore.
Chef Aaron Tan from Cantonese restaurant Man Fu Yuan and Executive Chef Yew Eng Tong from Alma by Juan Amador will present specially crafted 7-course menu featuring popular signature dishes from both restaurants alongside joint creations that showcases their creativity and brotherhood through the inter interplay of flavours, textures, and storytelling.
Some of the highlights for the dinner include Echoes of the Roast (沉默叉烧), Man Fu Yuan’s classic char siew Iberico pork collar which has undergone a 21-day aging process, slightly pan-fried with a caramelised finish. Complementing it is Alma’s Multi-Seed Man Tou (籽籽生香), a delicate multi-seed man tou paired with Bak Kwa mayonnaise and Seaweed Foie Bo Luo Bao(浮海之珍), foie gras atop seaweed Bo Luo Bao (Pineapple Bun).
From the kitchen of Man Fu Yuan, diners will be treated to the Golden Silk Lobster (金丝岩龙), succulent rock lobster, delicately poached, then crowned with a cascade of golden egg floss, and further enriched with briny tobiko and a velvety salted egg sauce. There’s also the Imperial Tides (蟹与皇) fresh Flower Crab Meat with Crab Roes, Onion and Ginger Herb Oil.
From the kitchen of Alma, diners will enjoy the A4 Snow-Aged Wagyu (雪中之歲), featuring snow-aged very tender A4 beef with charred leek, fermented black garlic purée, and cocoa jus. There’s also the Arctic Char (鱻), a pretty signature dish at Alma wherein thinly sliced fatty fish is wrapped in picked radish, fish bones are transformed into a delicate fish sauce and complemented by a refreshing watermelon and passion fruit salsa and finished with N25 Caviar on top.
End your meal with the Poached Peach (紫.苏.桃), poached peach with soursop sorbet, Sakura, salted buttermilk sago, and red shiso, served along with a A trio of Petit Fours beginning with Man Fu Yuan’s The First & The Last (鸡; 蛋), a playful rendition of Cantonese egg waffle infused with chilli chicken floss and strawberry aioli and Eternal Affection (情比金鉴), a golden osmanthus praline signifying endearing connections. The journey of flavours is completed with Alma’s Verdant Harmony (香兰抹茶 费南雪), a fragrant pandan financier with matcha, uniting Eastern and Western influences in a final, delicate embrace.
“This collaboration is a true reflection of our shared passion for pushing culinary boundaries while staying rooted in tradition,” says Chef Aaron Tan of Man Fu Yuan. “Echoes of the Roast was the dish that sparked this partnership – an exploration of aging techniques applied to classic Cantonese roast meats. It’s a bold yet respectful reinterpretation that highlights the depth of flavour achieved through time and craftsmanship.”
