A Season of Indulgence: Martell x Willow’s Fine Cognac & Contemporary Flavour Collaboration

Martell’s “Flavours of Martell” collaborative series has brought together two masters of their craft: Maison Martell, one of the world’s oldest great cognac house, and Willow, one of Singapore’s most refined Michelin-starred kitchens led by Executive Chef Nicolas Tam. Available from now until 13 December 2025, this exclusive menu is a showcase of the shared philosophy between the two brands, where an unyielding respect for quality reigns supreme.
The tasting journey at Willow is deeply satisfying, transforming the traditional notion of cognac-and-food pairing. At the center of this nine-course menu is the much-loved Sakura Ebi in Roasted Bone Soup, a dish that encapsulates the power of precision and subtlety. Here, delicate dried sakura shrimp lend bursts of umami, while the roasted bone soup is given new flavour dimensions with the inclusion of a few drops of Martell Chanteloup XXO that adds a silken mouthfeel, hidden layers of vanilla, orchard fruit, and a mellow oak finish. The soup’s depth grounds the brightness of the shrimp, while the cognac’s complexity lingers beautifully.
The Miyazaki A5 beef, infused and torched with Martell VSOP, is fork-tender and boasts an interplay of richness and subtle aromatic lift, while a financier dessert with truffle and honey, paired to an XO pour, delivers a luxurious finale of earthy, floral, and caramelised notes.

Each course is thoughtfully paired—whether with a classic Martell Cordon Bleu, age statement Chanteloup XXO, or a playful twist on Fine à l’Eau incorporating green tea for a local dessert. It is a menu that truly defies boundaries, weaving the story of Martell’s heritage and Willow’s modern Asian cuisine into a seamless tapestry of flavour.
