Looking for a suit? You might be at the wrong place.

Cleverly concealed behind the facade of a bespoke tailor shop on the first floor of One Raffles Place, Taylor Adam offers patrons an immersive experience from the moment they arrive.

The entrance ritual is nothing short of theatrical. Visitors are greeted as if they’re there for a fitting, then led behind velvet curtains to a “fitting room” This elaborate entry sequence sets the stage for an evening of intrigue and exceptional mixology.

Once inside, the bar’s intimate setting invites patrons to either perch at the counter or nestle into cozy nooks. The atmosphere likely reflects the speakeasy theme, with dim lighting and vintage-inspired décor.

Taylor Adam’s cocktail menu is a creative homage to Latin America, featuring drinks inspired by trade and travel across the Caribbean. This concept adds depth and storytelling to each libation, elevating the drinking experience beyond mere consumption to a journey of flavors and cultural exploration.

Caipirinha De Manga

The first drink we would recommend is the Caipirinha Di Manga (S$25). This innovative cocktail presentation transforms the traditional Brazilian Caipirinha into a theatrical experience. Served in an intriguing glass birdcage, the drink is shrouded in a mysterious fog created by dry ice, inviting curious glances through its tiny windows. This modern interpretation pays homage to the drink’s origins among São Paulo’s farmers, while elevating it to a status worthy of high-society gatherings. The mango twist likely adds a tropical sweetness to the classic cachaça-based cocktail, creating a perfect balance between the drink’s rustic roots and its sophisticated presentation.

Next, try the signature Nature’s Gift (S$25) cocktail which offers a lighter, fruit-forward alternative for those seeking a more subtle drinking experience. The drink artfully combines banana liqueur with Mezcal, the agave-based spirit, resulting in a well-balanced flavor profile that skillfully masks any harsh alcoholic notes. The palate is greeted with prominent caramelized banana flavors, complemented by subtle hints of maple syrup, creating a harmonious blend of sweet and smoky elements. The cocktail is elegantly garnished with a thin brûléed banana slice, adding both visual appeal and a delightful textural contrast. This thoughtful addition enhances the overall drinking experience, allowing patrons to enjoy the interplay between the garnish and the liquid components of the cocktail.

For appetizers, we recommend starting off with the Mexican Corn in Crispy Shells (S$14). This appetizer offers a delightful twist on traditional Mexican street corn. Nestled within crispy taco shells, a generous portion of sweet corn kernels is mixed with creamy, chilled crème fraîche. The combination creates a refreshing and texturally interesting dish, reminiscent of a reimagined coleslaw. The contrast between the crunchy shell and the soft, cool corn mixture provides a satisfying start to the meal, effectively whetting the appetite for what’s to come.

Peruvian Grilled Chicken

Next, the Peruvian Grilled Chicken (S$16) is a sensory delight, beginning with the irresistible crunch of perfectly charred skin. As you bite down, the succulent meat beneath releases a burst of savory juices, creating a mouthwatering contrast of textures. A subtle smokiness permeates the chicken, adding depth and complexity to its flavor profile. Accompanying the dish is a cool yogurt-cream dip, its refreshing tanginess cleansing the palate between bites and enhancing the overall dining experience. Definitely our favorite of the night.

The Steak with Chimichurri (S$28) showcases a perfectly cooked medium-rare steak, its juicy tenderness complemented by a vibrant chimichurri sauce. The meat, expertly prepared to retain its natural flavors, serves as an ideal canvas for the zesty, herb-infused condiment. The chimichurri sauce, with its bright acidity and aromatic herbs, cuts through the richness of the steak, creating a harmonious balance of flavors. Each bite offers a delicious interplay between the robust meatiness of the steak and the fresh, piquant notes of the sauce, resulting in a truly satisfying culinary experience.
