Located at the Raffles Arcade, Butcher’s Block opened early this year, replacing the Long Bar Steakhouse. This month, the restaurant has made some menu updates since they first opened.

Helming the kitchen is Chef Rémy Lefebvre, who has almost two decades of culinary experience at several highly-acclaimed independent restaurants and luxurious 5-star hotels. Here at Butcher’s Block, Chef Rémy showcases time-honoured techniques of curing, ageing, fermenting and showcasing the distinctive flavours of wood and fire. “Different types of wood and charcoal can be used in the cooking process to flavour the dish as if they were a condiment,” shares Lefebvre.

While it’s situated within the vicinity of famed Raffles Hotel Singapore, the steakhouse exhibits comfort and elegance with its stylish dark wood and cobalt blue paneling as well as bold brass furnishing. Step into the restaurant and immediately be greeted with a display of fine cut of meats inside a glass cooler aptly called “The Vault”, while the open kitchen adds a touch of luxury as you watch the chefs in action preparing your meals. For more intimate gatherings, private rooms are available as well.

The menu covers an abundant signature cuts of beef such as the John Stone Angus Grass Fed 28 Days Dry-Aged selections – “Lady” Cote de Boeuf, Ribeye and Sirloin bone-in cut. Limited and rare cuts of beef such as Murata Wagyu A5 from Saga Prefecture in Japan is also available.

Porterhouse

Those opting to have a meat-free meal, their ala carte menu selections will not disappoint as Chef Rémy Lefebvre makes some interesting flavour pairings such as the Hummus served with tahini cream, falafel, zahatar oil and trout roe, savour this classic Middle Eastern dish in a modern way. The sea urchin ceviche is another favourite which has fresh seafood (scallop, scampi & octopus) in tangy aguachile, coconut and just the right amount of spice from the jalapeño. Opt for the Carte Blanche and Chef Lefebvre will serve you a surprise menu for your entire table which surely won’t disappoint.

With more than 200 bottled labels, including an excellent selection of natural wines, you can’t possibly go wrong with the sommelier’s sound suggestions.
