Australia’s leading luxury single malt company, LARK Distilling Co, has launched its boldest portfolio yet—three new core expressions that capture Tasmania’s wild, elemental spirit in every glass. Born from the island’s extreme climate, pure water, peat from ancient marshes, and rare fortified wine casks (some over 100 years old from Seppeltsfield Wines), these whiskies showcase LARK’s signature fortified depth of flavour, silky mouthfeel, and New World umami. The Fire Trail is the purest showcase of LARK’s house style; this unpeated single malt glows with a deep amber hue, hinting at its rich maturation. On the nose, the first whiffs reveal baked pears steeped in caramel, bright citrus zing, and cedarwood that evolves into layers of vanilla custard and apricot compote on the palate. The finish lingers with dark cocoa, hazelnuts, velvety coconut cream, and honey—bold, vibrant, and unmistakably Tasmanian in its introduction to whiskies from down under.

The Devil’s Storm is a whirlwind of intensity; this core expression shimmers in rich amber tones. The nose bursts with stewed plums in honey, notes of orange, roasted pecans, and cacao dust, leading to a palate of dark chocolate over blackberries, caramel fondant, charred peaches, and very subtle peat smoke. The finish involves burnt maple syrup, sticky toffee pudding, and toasted sesame for a powerful, balanced warmth.

The pinnacle of LARK’s new luxury portfolio, the Ruby Abyss’s deep ruby-amber colour is the result of maturation of the elixir inside century-old port and sherry casks. Nosing notes focus on amber raisins, caramelised sugar, and salted macadamia that evolve into a palate of plum, chocolate, and earthy peat. The finish deepens with fortified oak, spiced golden treacle, candied quince, and umami velvet that results in a whisky best enjoyed on its own or as a post-meal aperitif.
