Mandarin Oriental Singapore Appoints Niccoló Ferrazzani as New Sous Chef of Dolce Vita

Mandarin Oriental Singapore has recently announced the appointment of new Restaurant Chef, Niccoló Ferrazzani, for the hotel’s Italian dining concept, Dolce Vita. With over a decade of culinary expertise, including stints at Michelin-starred Osteria di Passignano, as well as the acclaimed La Dame De Pic. Chef Niccoló’s personal culinary ethos emphasises on using the finest seasonal produce in his menu, and is adventurous in trying different cuisines to uncover unique flavours and techniques, that can be used in the crafting and experimentation of new dishes and menus.

Here are some of the dishes we tried by Chef Niccoló and his team.
The Ricciola, a gorgeous starter, was equally easy on the eyes as it was on the palate. Comprising of marinated Japanese Hamachi along with a zesty yuzu vinaigrette, citrus datterino, freshly sliced grapes and vine tomatoes, as well as dill essence; this was wonderfully refreshing and moreish.
For mains, we picked the signature Filetto, which came beautifully medium-rare – pan-roasted Sanchoku Wagyu beef tenderloin, served alongside stewed potato leek cannolo, macadamia, champignon velouté, and red wine jus perfumed with truffle. The tenderloin was juicy and paired well with the fragrant champignon velouté, but the star of the dish, in our opinion, was the delightful potato leek cannolo – batons of nutty, mashed potato goodness.
To finish off the meal, we opted for the classic and highly recommended Tiramisu, a surprisingly huge serving – we recommend sharing between two! Arriving in a deep porcelain bowl, we dug straight in. The mascarpone mousse was one of the best we’ve had, and it was truly a pity we were too full after the previous courses to finish it all.
