Masterchef Australia chef George Calombaris and COA Co-Founder Jay Khan to lead Mandala Masters’ next culinary residency in Niseko
Mandala Masters partners with YTL Hotels to bring Mandala Club to Niseko for a four-month residency from December 2023 to March 2024

Mandala Club is heading to Niseko next month for its newest culinary residency in Niseko. During the four-month residency, Malaysian-Australian chef Esca Khoo will lead the culinary team while being supported by Reuben Davis and Chef Chun, Mandala Group’s culinary Director and Head of Japanese cuisine. Canadian Sake Samurai, Elliot Faber will lead the beverage team to concoct the best cocktails, sake and extensive list of curated beverages.
Visitors to Mandala Club Niseko will be able to indulge in elevated chalet classics lunch, après and dinner at Mandala Club’s flagship restaurant POPIS. Some dishes to look out for include, Hokkaido Sea Urchin Rosti, kutchan potato cake with takashi dairy sour cream and chives. Hokkaido Snow Crab Salad with steamed white crab meat, radish, crispy yam and sudachi vinaigrette.
The Hokkaido Sea Urchin Spaghettini, house-made pasta with flat parsley and lemon panko breadcrumbs steals the spotlight along with the Makkari Pork Schnitze with yuzu brown butter, sweet cabbage coleslaw and grain mustard. The Crème Caramel with japanese riesling jelly, sake poached raisins and okinawa brown sugar caramel ends the meal on a sweet note.
At the Snow Parlour, Mandala’s Music Director Joshua Pillai and long-time friend of the Club Candice B along with a roster of musical talent presents an open format music over Japanese-inspired cocktails and spirits.
A season-long roster of world class chef and bartender pop ups from Masterchef Australia chef George Calombaris and Jay Khan of COA, Asia’s No. 1 Best Bar 2023 further fuels Mandala Niseko’s ‘Cultural Calendar’ of events programming.
