Menbaka Fire Ramen Celebrates First Anniversary with the World’s First-ever Ebi Fire Ramen

Looking for a dining spot that has both flair and flavour? Look no further than Menbaka Fire Ramen, famed for its novel and Instagram-worthy presentation of ramen. And this time, for the first anniversary of their Singapore outlet, Menbaka Fire Ramen is celebrating the occasion with a limited edition ebi series, created by Master Masamichi Miyazawa, the joint’s founder. The three ebi-centric dishes are available exclusively in Singapore, from 12 November to 31 December 2021.
To experience the signature Fire Ramen experience, go for the Ebi Fire Ramen (from S$19.90). Sit back at the bar and watch the chef set your ramen aflame – a technique that uses negi (Japanese green scallion) oil set to ignition – before tucking into your piping hot bowl of ramen. The signature flaming technique is not just for show either, adding an addictive charred fragrance to the richly savoury prawn broth – much like prawn noodles with added wok hei. Topped with prawns, crisp sakura ebi, tender chashu slices and a wobbly onsen egg, this is a dish that is both hearty yet comforting.
If you’re more into feeling the heat on your tongue instead of your skin, go for the Ebi Mazesoba (from S$19.90) instead. Here, fragrant seafood oil (made with roasted prawn shells and flower crabs, amongst other ingredients) and spicy dried shrimp paste add both flavour and heat to the dry ramen dish. Complete with prawns, sakura ebi, chashu slices, minced pork, nori strips, and an onsen egg, this is a dish to have if you’re not much craving for soup.
Pair your ramen with the Volcano Ebi Kakiage (S$7.90) – an okonomiyaki-style dish made with kawa ebi, carrot and onion strips that have been covered in a light batter and fried to an addictive crisp. Shaped like its namesake, and topped with Japanese mayonnaise, okonomiyaki sauce and bonito flakes, this is a dish that is both fun and delightful to have as a side.
