IPPUDO X SG Hawkers Exclusive Collaboration Celebrates Singapore’s Dynamic Hawker Culture

Singapore is a city known for its food-loving culture, and in light of its hawker culture – which has received global recognition through the UNESCO Representative List of the Intangible Cultural Heritage – IPPUDO has partnered with local hawkers to put a spotlight on traditional hawker flavours. Known as A Global Edition: IPPUDO X SG Hawkers campaign, IPPUDO has collaborated with renowned F&B businesses – Da Dong Prawn Noodles, Jin Ji Teochew Braised Duck & Kway Chap, and Keng Eng Kee (KEK) Seafood – to meld the familiar flavours of hawker cuisine with that of IPPUDO’s ramen, and bring it to both a local and international audience.

Over six months of research and collaboration with the second and third-generation owners of the stalls have culminated in the Hawker Heritage Set (S$28++), featuring three delightful dishes: the Hae Ramen, the Lor Ark Bun, and the Kopi Chicken Karaage.

The Hae Ramen is a hearty bowl of noodles much like a cross between prawn noodles and ramen, with a broth that uses a blend of Da Dong’s prawn soup and IPPUDO’s signature tonkotsu broth, resulting in a soup that is hearty, creamy, and oh-so-moreish. Together with IPPUDO’s thin Hakata-style ramen noodles, prawns, beansprouts, and an indulgent serving of deep-fried pork lard, tuck in to this warming bowl of goodness – and don’t forget to add in a dollop of hae bee hiam paste for a kick of spice, too. The Lor Ark Bun consists of pillowy mantou buns sandwiching generous slices of Jin Ji’s signature braised duck – we were only too glad to get our hands messy for this! Sink your teeth into the Kopi Chicken Karaage, which features IPPUDO’s Japanese-style fried chicken thigh and KEK Seafood’s bittersweet coffee sauce – the toasted caramel notes of the sauce went together oh-so-well with the succulent bites of chicken thigh.

The Hawker Heritage Set set (S$28++) is available exclusively at IPPUDO’s Marina Bay Sands outlet from 28 April to 15 May 2022, while stocks last.
