Hot! Michelin-Starred Whitegrass introduces Japanese High Tea with Free Flow Bubbles

The Otsumami High Tea

Boyutei introduces its first otsumami high tea made with ingredients and inspirations called for by the changing winds of the season. Curated by Head Chef Takuya Yamashita of one Michelin-starred Whitegrass, the high tea comprises his favourite tea time otsumami, ranging from sweet to savoury. They are served in the classic Japanese jūbako (tiered boxes), reminiscent of Japanese osechi ryori (New Year) festivities as an ode to tradition.

The savoury bites include Unagi Toast that serves grilled eel slices with egg omelette, Japanese cucumber and seaweed on top of an open faced toast; Ebi Katsu, fried prawn cutlets topped off with a dollop of homemade chilli sauce; and Somen with Sakura Ebi that riddles perfectly al dente somen noodles with a tossing of baby shrimp.

The Olive Financier is a pillowy soft cake fragranced with black olives while the Narazuke Cream Cheese in Monaka holds whipped cream cheese in a small boat of light-as-air wafer. Finally, the Bocconcini with Moromi Miso comes on a stick presenting two perfect bites of mozzarella cheeseballs, finished off with a smudging of house-made miso paste.

The sweet encompasses items that are pretty on both the eyes and lips. The Hojicha Financier balances the earthiness of hojicha tea in a moist financier cake with sweet icing sugar, while the Sticky Date is a sweet rich pudding off-set with the tartness of pure dehydrated raspberry powder. The Tiramisu comes with a twist from the ordinary, dusted with matcha powder and topped with chocolate crumble. The sweets are completed with handmade Matcha Warabi Mochi, tempering the palate with an ideal bitter-sweetness; and freshly churned Goma Nama Chocolate, where a rich chocolate nugget is coated with a layer of nutty black sesame.

Boyutei’s otsumami high tea set is priced at S$69++ per set for 2 persons, comes with two hot brews and is available for all-day dining.

On all weekdays of September, elevate your high tea experience with an option to top-up with free-flow natural sparkling wine from 3 – 5pm for only S$30++ (U.P. S$38++) per person or enjoy Masumi Junmai Ginjo Shiro sake at S$15++ (U.P. S$18++) per glass or S$70++ (U.P. S$88++) per bottle.
