Bhoomi: Chef Milind Sovani’s newest venture in Singapore

Known for being one of the most famous Indian chefs in Singapore with a long list of successful restaurants such as Rang Mahal, The Song of India and Masalaa Bar, Chef Milind Sovani has set his sights on opening up his newest establishment at Claymore Drive, Bhoomi.

The concept of Bhoomi (meaning Earth in Indian) came to Chef Milind during his trip to India and he had the chance to revisit his childhood hometown and the journeys he made across India’s vast countryside and humble homes. Thus, he decided to open Bhoomi with its core concept being a purist Indian restaurant that focuses on invoking nostalgic memories for his customers. The menu itself will feature age-old recipes that have been passed down through generations and focus on different regions of India simply crafted with the finest ingredients and traditional techniques.

Bhoomi’s décor is similarly and purposefully crafted to create an ambience that reinforces the
warmth of Indian hospitality. From the earthy tones of its paneled walls and floors to the
aromas wafting from the kitchen, every detail is designed to evoke a sense of homecoming for patrons and their guests.

Much like the passing down of stories through generations, Bhoomi’s menu features ‘Bhoomipedia’– an explorative narrative that seeks to keep memories alive for guests to appreciate. Bhoomi also takes pride in sourcing original, authentic, sustainable and healthy food supplies that delight the palate, nourish the body and respect the planet.

Koila Butter Chicken

Koila Butter Chicken (S$26)
A quintessential Indian classic, the Koila Butter Chicken at Bhoomi takes this beloved dish to new heights. Slow-cooked in a clay pot within a charcoal pit, the chicken is tender and infused with smoky, aromatic flavors that enhance the richness of the creamy tomato-based gravy. This method of cooking, known as “dum,” allows the flavors to meld together beautifully, resulting in an elevated comfort food dish that is both luxurious and soul-soothing.

Indori Beetroot Tikki, Bhuttey Ka Kees (S$16)
Inspired by the vibrant street food culture of Indore, the Indori Beetroot Tikki is a celebration of color and flavor. This dish features a beetroot patty, its natural sweetness balanced by earthy spices, creating a symphony of taste that is as visually stunning as it is delicious.The beetroot is paired with Bhuttey Ka Kees which is a spiced sweetcorn crumble. The contrast of textures, from the crispy exterior of the tikki to the creamy spiced corn, pays homage to Sarafa Bazaar, Indore’s iconic street food market.

Awadhi Chicken Dum Biryani

Indulge in the regal flavors of Lucknow with the Awadhi Chicken Dum Biryani. This culinary masterpiece features fragrant, saffron-infused rice layered with succulent chicken marinated in a blend of Awadhi spices. Slow-cooked in a clay pot, the biryani absorbs the smoky essence of the charcoal pit, resulting in a dish that is aromatic, rich, and utterly satisfying that will pair well with the curries or the following dish!

Incredible Pani Puri (S$15)
A true icon of Indian street food, Pani Puri is reimagined in its most authentic form at Bhoomi. Chef Milind’s famous OG recipe brings you the ultimate experience of this beloved snack. The crisp, hollow puris are filled with tangy and spicy tamarind water, balanced perfectly with a special secret chutney that must be eaten immediately in one bite. The burst of various flavours sweet, spicy, tangy, and savory and a burst of flavors presents a nostalgic yet refined taste of India’s bustling streets, now presented with luxury and finesse.

Bhoomi Jamun-Rabdi, Rose

Conclude the meal with the indulgent Bhoomi Jamun—an exquisite dessert that showcases the flavors of Delhi. This dish features the iconic Gulab Jamun, soft and syrupy, paired with Rabdi, a rich, reduced milk delicacy infused with rose. The combination of these traditional elements creates a dessert that is both sweet and aromatic, but not overpowering enough to the point that the sweetness will have guests refrain from taking another bite. The Bhoomi Jamun is a delightful end to your culinary journey, leaving you with a taste of India’s finest sweet traditions.
