Kohaku Tendon Launches Its New Spring Tendon
As we enter the spring season, Kohaku Tendon introduces its brand-new Spring Tendon brimming with a medley of peak-season produce and beloved spring ingredients.
One of the main ingredient in this bowl is the tilefish which is best harvested during the spring season, the fish is known for its firm texture and sweet flavour. With its skin and scales intact, the fish is coated with batter only on the flesh side, before it goes into the fryer. As tilefish scales are smaller in size than other fishes’, they help contribute to a contrasting texture of brittle, crisp exterior and tender, moist inside.
The tamagoyaki will sure to tease your palate with its rich and robust flavour. The Japanese rolled omelette is freshly made, coated with Kohaku Tendon’s signature tempura batter and then deep-fried. Other seasonal ingredients include the white asparagus, which is a highly coveted vegetable in spring. Bamboo shoots are also best enjoyed during this season, as they boast a sweeter note. Fu, or Japanese wheat gluten, which is commonly used in Japanese soups, takes on the shape of a sakura leaf.
Finally, there is the pickled sakura leaf, which is first coated with tempura batter and then deep-fried. Often used in wagashi, a traditional Japanese sweet, the pickled sakura leaf has a fragrance that recalls the aroma of Japan’s famous cherry trees.
Besides these ingredients, the bowl also come with the usual staples: prawn, chicken breast and mushroom tempuras, drizzled with mentaiko mayonnaise.
The Spring Tendon is priced at S$18++ and is available from 4 March 2019, for a period of three months.
