One-Ninety Bar at Four Seasons Hotel Singapore has launched its latest menu, “Polaroids of Singapore, Volume I,” a flavour-driven, art-infused celebration of the city’s rich tapestry. Designed by Head Bartender Sophia Kang and her team, the menu brings together 16 new cocktails that distill the multicultural essence of Singapore—Chinese, Malay, Indian, and beyond—into inventive drinks and artistic experiences.

What sets this menu apart is not just its inventive flavour profiles but also the meticulous hand-drawn illustrations by in-house artist Terrence Huang, who has rendered all cocktails as expressive visual replicas. The hand-drawn menu not only guides the guest through a sensory adventure but also animates the narrative, letting each drink tell its own part of Singapore’s story.

Each cocktail looks as good as it tastes, served in elegant glassware—often with whimsical garnishes and dramatic flourishes, like edible rice paper or baby Japanese peaches. The Bei Shi’s Dance fuses whisky with grape and mandarine liqueur, raspberry-orange bitters that echo the vibrant energy of the Chinese lion dance in a bold but velvety smooth sip. The Rojak Sour reframes the beloved local favourite into a tart, creamy vodka cocktail with pineapple, cucumber, lime, a touch of briny shrimp sauce, and falernum—a tribute to sweet, sour, and spicy memories. The Pot of Gold highlights pineapple and mezcal elements, celebrating the promise of prosperity with woody smoke and citrus aromatics. The Yuen Yang is reminiscent of local breakfasts with layers of banana peel, rum, hazelnut, cacao, espresso, and cream—a silky homage to Singapore’s kopitiam culture.

Malay inspirations include the Kelapa Old Fashioned, a creamy, nutty twist on the classic tipple, while the Echoes of Batik crowns features their own twist of a Gin Fizz topped off with edible rice paper that honours the artistry of traditional textiles, while a Serai Fizz features a highball with lemongrass and ginger.

In the Indian chapter, drinks like People’s Market and Masala Manhattan layer spice market vibrancy—whisky, apricot brandy, jackfruit, and honey in the former, and masala-infused bourbon and vermouth in the latter.

Other highlights include Royalty Scone, a buttery scone fat-washed gin cocktail that is reminiscent of a classic British afternoon tea, while Yellow Dress is a clarified milk punch packed with tropical and floral notes, whose elements are inspired by the Thaipusam festival.
