Indulge your carnivorous desires in an sizzling new steak and grill concept by Chef Otto Weibel, a respected veteran in Singapore’s F&B scene. Formerly known as Otto’s Deli Fresh, the bistro has now been revamped into a sleek yet cosy restaurant serving up Western contemporary cuisine with a specialty in steaks and grilled items. Here at Black Marble, savour a premium variety of meats from Australia, Japan, and USA, along with the freshest ingredients crafted into hearty fare by Chef Otto and Head Chef Jay Siaw.
Start your meal right with the warming appetisers of Black Truffle Emulsion ($15) or Baked Brie Cheese ($16). The former is a rich fragrant bowl of soup with dark curls of seasonal black truffle atop it, along with crunchy puffed wild rice, kale, and extra virgin olive oil. Meanwhile, the latter is the perfect sharing dish and starter: a wheel of brie is covered in mildly sweet and fragrant acacia honey, then baked until melted on the inside. Topped with rosemary sprigs and fermented black garlic, spread the addictive cheesy goodness on the accompanying slices of toasted baguette – you’ll find yourself reaching for slice after slice!
Black Marble also serves up a lovely Lobster & Scallop Saffron Risotto ($34); creamy, warming and not overly rich. Italian risotto rice is simmered in a thick lobster broth with crème fraiche and saffron, sweet green peas and smoked mullet bottarga. Combined with sweet freshness of the scallop and the meaty, juicy Boston lobster, this was a delightfully moreish dish.
Onto the mains! Those with carnivorous diets would not be disappointed here – Black Marble offers a variety of meats, from the luxuriously melt-in-the-mouth A4 Japanese Kagoshima Wagyu Beef Sirloin, to the tender and surprisingly non-gamey Grain-fed Lamb Rack (350gm) ($38). Our favourite was the 45 Days Dry-aged Angus Bone-in Ribeye (600gm) ($78), where the meat is painstakingly dry-aged in-house with Himalayan salt through a time-consuming process, resulting in a wonderfully flavourful steak that leaves the tongue tingling with a delightful savoury richness.
We recommend having the 24-hour Brine Hand-cut Fries ($8) along with your steaks or grills – thick, crisp and fluffy on the inside, these were a delight on their own or paired with the side of refreshing green yuzu mayo.
Seafood-lovers or those who come in groups, do consider having the From The Sea Platter ($88). A wonderful sharing platter, this luxurious dish comes with many gems of the sea: juicy Boston lobster tail, Tasmanian mussels, huge and meaty U6 tiger prawn, chargrilled octopus, and tender salmon trout.
End off your meal with the delightful Burnt Banana & Buttermilk Waffle ($12) –a fluffy waffle topped with peanut butter ice cream, chargrilled banana caramelised with brown sugar, and sprinkled with crispy crumbs and chocolate pop rocks!
