There is something quietly joyful about a lunch that makes you want to linger, and Cygnet at QT Singapore is hoping to give you exactly that. Newly appointed Executive Chef Fabrice Mergalet has introduced a fresh weekday executive set lunch built around beautiful produce, priced at S$48++ for two courses and S$58++ for three. Highlights from the new menu include the Chef’s Sea Bream Ceviche, a lively tumble of fresh sea bream, aji amarillo, avocado and olives, crowned with seaweed popcorn that adds a delightfully unexpected savoury crunch. For an extra treat, the Red Prawn Carpaccio comes drizzled with a Virgin Bloody Mary sauce and dotted with white truffle pearls. Alternatively, to celebrate a promotion, guests can enjoy a Seafood Platter with oysters, prawns, and chipotle lobster rolls!
Vegetarian options are also aplenty, from the Grilled Halloumi with quinoa, chickpeas and a simple zesty lemon and oregano dressing, to a warm Grilled Portobello nestled against creamy white beans, guindilla dressing and spiced hazelnuts.
Moving on to the mains, Cygnet’s beloved New York burger has been lovingly reborn as the Smashed Wagyu Burger, stacking two juicy Wagyu patties with pastrami, tangy sauerkraut, melted cheddar and the house sauce, with seasoned fries on the side. The much-loved King Crab Tagliatelle returns as fresh handmade pasta is simply cooked with tomatoes, chilli, salmon roe and lemon, combining the sweetness of the ingredients with a mildly spicy kick all at once! For a more luxurious and filling option, the Pyrenees Lamb comes perfectly cooked medium rare alongside a fresh cilantro aji verde sauce and sweet candied walnuts.
End the quick lunch break on a high with a Tiramisu Affogato, Crème Caramel, or the Lemuel Chocolate Fondant with pepper berry salted caramel ice cream, or warm mini Madeleines fresh from the oven to close off the meal.
Perhaps the most generous gesture of all is the free corkage that comes with the set lunch, an open invitation to bring along a bottle you treasure and share it over a meal with a colleague that deserves it.
Cygnet’s new weekday set lunch menu is available Monday to Friday from 11.30am to 2.30pm.
Cygnet is located at QT Singapore, 35 Robinson Road, Singapore 068876.
