Frasers House, a Luxury Collection Hotel, Singapore, has given The Lobby Lounge a refreshed identity, with an updated all-day menu, a new after-hours ritual, and a spice-themed afternoon tea that leans into its Bugis heritage with more flair and panache. The common thread that pulls everything together is craftsmanship: familiar Singapore flavours are reworked with sharper techniques, while international dishes arrive with enough comfort and richness to suit a long lunch, a pre-dinner pause, or a full afternoon spent lingering over tea.

For the new offerings, the Wagyu Beef Burger is a rich, juicy easy-going crowd-pleaser, with a 200g Australian Wagyu patty, aged cheddar, crispy bacon, and caramelised onions tucked into brioche, giving each bite a sweet-savoury pull. The Mount Schanck Lamb Rack comes immersed in its natural jus and seasonal vegetables, which lets the flavour of the meat stay front and centre. Finally, the Tom Yum Creamy Seafood Linguine features jumbo lump crab, Hokkaido scallops and tiger prawns into a spicy, aromatic tom yum base lifted by lime and a light saffron espuma. One of the iconic dishes of the house signatures has to be the returning Frasers House Beef and Black Truffle Hor Fun that elevates a comfort food classic into a premium treat with ICON XB Wagyu striploin from Tasmania.
The new After-hours Rituals concept, shifts the Lounge into an evening destination with a more social, tapas-and-drinks format. Inspired by the Bugis-Bras Basah precinct, the menu is built around shareable plates with strong local echoes: the Bak Kwa Bikini Sandwich combines smoky pork bak kwa with Manchego for a salty, melty bite that feels familiar yet elevated, while the Wok Hei Chilli Prawns deliver that unmistakable high-heat, smoky wok fragrance Singapore diners love. The House Sambal Charred Octopus adds deeper spice and a more layered savoury finish, giving the evening menu enough edge to match the unlimited pours format. Guests will get to enjoy two hours of free-flow wine, Prosecco, Gin & Tonic, Aperol Spritz and Tiger Beer from Sunday to Thursday, plus two tapas; Thursdays also feature a Ladies Night offering, making it an easy after-work ritual rather than a one-off outing.

The most characterful launch, though, is the Atelier of Tea and Spice, the first themed afternoon tea since the hotel’s transformation. The theme reflects Bugis’ history as a trading district where teas, spices and ideas once moved through the area. The savouries are especially thoughtful: Home-cured Norwegian Salmon Vol-au-vent blends well with Chinese five spice; French Duck Rillettes are topped with toasted cumin; Spicy Tuna Tartare brings citrus lift and a little heat beneath avruga caviar; and Laksa Atlantic Cod Quiche pays homage to local flavours through laksa spice, sakura ebi and sambal aioli. Exclusively curated for The Lobby Lounge, a Heritage Tea Granita clears the palate before the sweets arrive, which are built around tea as much as dessert- featuring Oolong Tea Eclat with passion fruit custard, Lychee English Breakfast Tea Cake, Green Tea & Pear Harmony, Blue Pea Chamomile Tart, and the Lemongrass Key Lime Teapot.
