The St. Regis Singapore unveils a reimagined bar experience

The newly launched St. Regis Bar is a refined tribute to early 20th-century Manhattan, reinterpreted with a modern sensibility and elevated by Singapore’s local touches. Entering through statement brass double-storey doors, guests are welcomed into a striking interior designed with intricate craftsmanship and layered elegance. The bar’s birdcage-inspired back bar, built from aged brass and softly illuminated cubed displays, houses a remarkable spirit collection, while the marble-and-liquid-metal counter adds a contemporary shimmer against a backdrop of deep reds, lush greens, and rich ebony. Refined geometric flooring, floral touches, and intimate alcoves create an atmosphere both sociable and sophisticated, complemented by art pieces that nod to Picasso’s Toro series.

Leading this new chapter is Head Bartender Kelvin Saquilayan, whose award-winning experience at Manhattan and international competitions informs an inventive yet polished approach to mixology. Central to his vision is the debut of the “Time After Time” cocktail menu, a journey through five defining decades of New York and Singapore drinking culture. Guests can expect imaginative creations such as the Merlion Sling, the playful Disco-tea-que Spritz, the tropical Eternal Tropicalia, and the bold Club Kid Espresso, alongside a futuristic retelling of the DOF.01 Old Fashioned.

Anchoring tradition with innovation, the bar introduces a new take on its signature Bloody Mary — The Straits Mary — a smokey, spice-driven cocktail layered with bak kwa-infused bourbon, chilli padi, sancho pepper, black pepper, and gochujang. Martini lovers will also find a trio of expressions highlighting the dual narratives of New York and Singapore, crafted to reflect both individuality and unity. For non-drinkers, there are three inventive zero-proof mocktails, playing on the bar’s time-travel motif, featuring clarified teas, tropical ferments, and house cordials infused with passionfruit, oolong tea, and pineapple.
