On any given day, you’re often advised not to put all your eggs into one basket – but Easter weekend is coming up this April, and if there’s one place we’d want to dine at, it’s Burger & Lobster, with their eggs-cellent Easter Brunch menu! From 15 to 17 April 2022, hop on down to either outlet at Jewel Changi Airport or Raffles Hotel, and have yourself goodies like the Eggy Lobster Roll and Beetroot Rissoles & Butternut Squash steak. Besides that, there are also refreshing cocktails like the Lillet Spritz to sip on – because what’s brunch without a little booze?

Burger & Lobster has jazzed up their signature lobster roll for this upcoming brunch menu – the aptly named Eggy Lobster Roll combines umami salted egg mayo with chunks of lobster meat, all sandwiched between toasty, buttery halves of a brioche roll with a ‘lil fried quail egg on the top. And putting the “burger” in its name is the absolutely brunch-worthy Benedict Burger, a thick and succulently grilled black Angus patty combined with a poached egg, juicy beef tomato, watercress salad, confit onion jam and drizzles of béarnaise sauce, all on a soft cornmeal muffin. Hearty, savoury and oh-so-moreish! For those who are on a plant-based diet, do try the Beetroot Rissoles & Butternut Squash steak,  a tasty begedil-like beetroot patty and grilled herb-crusted butternut squash with yoghurt aioli and micro-cress salad on the side.

Pair them with Burger & Lobster’s specially curated Easter brunch cocktails: the classic Chivas 13 Highball, the refreshing Lillet Spritz  – we loved the one made with Lillet Rose, putting a sweeter, floral note on the tipple, and the brunch favourite, Aperol Spritz.

Egg in Golden Nest

Save some room for dessert, of course! The gorgeous Egg in Golden Nest is perfect for those with a sweet tooth: a dark chocolate eggshell filled with white chocolate mousse and lemon curd, tucked within a ‘nest’ of caramel-gold vermicelli, raspberries and powdered sugar. Or go for the rich Chocolate Fondant, a classic dessert sure to delight and have you reaching for spoon after luscious spoon.
