Set to be the season’s most compelling culinary collaboration, one of the world’s leading chefs, Germany-based Joachim Wissler, will bring his three-star Michelin excellence, culinary prowess and creativity to Singapore for a unique and unprecedented four hands dining experience with Chef Kirk Westaway, Executive Chef of Michelin-starred JAAN. As the pioneer of ‘New German Cuisine’, it is only natural for Chef Joachim to join forces with Chef Kirk – who has also embarked on his own gastronomic journey of ‘Reinventing British’ – sharing Joachim’s philosophy to continuously innovate personally authentic dishes using the finest natural and seasonal produce. The pair will present two lunches and two dinners, on the 10th and 11th of October at JAAN, Singapore’s iconic and multi award winning 70th floor dining establishment.

Hailing from Bergisch Gladbach, Chef Joachim helms the globally acclaimed Vendôme restaurant at Grandhotel Schloss Bensberg, where he is the only chef in the district to have earned the coveted three Michelin star status. Adding to his string of accolades is an unwavering presence in World’s 50 Best Restaurants awards and the winning of 19.5 prestigious Gault Millau points in ‘Best Restaurant in the World’ in 2003. At Vendôme, Chef Joachim breaks away from the influences that traditionally shape his country’s cuisine and this October, he will be bringing his reimagined, sophisticated regional fare from Germany to Southeast Asia’s fine-dining capital.

English Garden

The lunch sees an elevation of light flavours, shining a spotlight on delightful seafood courses and the season’s freshest vegetables. Guests will be able to savour Chef Kirk’s English Garden, inspired by fond childhood recollections of his hometown of Devon, England, with its flourishing abundance of freshly picked fruits and vegetables. The vegetable medley is served with a light Scottish seaweed and herb broth in a custom-made watering can, immersing diners in the delightful experience of watering their own plated English Garden. Chef Joachim’s Langoustine and Sweet Potato with a refreshing carrot lime nage, cucumber jelly and spiced almond emulsion, as well as his Grilled Gillardeau Rock Oyster and Kristal Caviar with green apple and German wheat beer foam, distil the essence of German cuisine – reconstructing it through Chef Joachim’s signature molecular cooking style.


The exquisite dinners on Wednesday and Thursday take guests on an epicurean journey from the coasts of Southwest England to Western Germany. Chef Kirk and Chef Joachim demonstrate their creativity, both leaning on their nomadic experiences, celebrating their heritage and deep regard for seasonality to deliver a truly unforgettable dining experience. The menu features Chef Joachim’s Roast of Wagyu Beef Entrecôte with bone marrow, beetroot and sweetcorn, as well as Chef Kirk’s Line Caught Halibut with flavourful purple artichoke purée and blanched rolled kohlrabi.
