MO BAR Vol. 7: MO BAR’s new menu celebrates Singapore’s creative landscape

MO BAR Singapore’s newest menu, Vol. 7: Modern Localism, The City of Art, feels less like a cocktail list and more like a guided walk through Singapore’s streets. Built around 15 unique cocktails and 11 different local brands that stretch across perfumery, design, food, music and hospitality, the menu is framed as a “notebook in motion,” moving from morning rituals to late-night drinks in a way that captures the city’s changing rhythms and moods.

The morning section opens with bright and sensory flavours. Sifr Fizz (S$26++) is an aromatic highball that leans clean and elegant, with essential oil hydrosol giving it a perfumed lift, while elderflower and saffron soften the edges into something graceful and airy. Forest Fire (S$27++) shifts the mood dramatically with Monkey Shoulder whisky, mezcal and a spiced amaro built on nutmeg and clove—smoky, earthy and a little brooding, like a gallery piece with weight. Velour Kiss (S$26++) is one of the most approachable drinks on the menu: gin, chamomile, bee pollen and extra virgin olive oil create a silky, calming profile that feels like a restorative pause, especially after a day of walking around the city. The Artis (S$22++) plays the role of the thoughtful non-alcoholic option, with fermented banana tibicos, pandan and coconut salt giving it a layered, tropical-savoury profile; it can also be spiked with vodka for those who want a stronger version.

As the day moves into the afternoon, the menu becomes richer, more textural and more playful. Bukit Kemas (S$26++) uses Ryukyu baijiu, Lillet Blanc and roasted corn to create a dry, slightly old-world cocktail with a polished finish, while Kopi Pumptini (S$26++) is a toastier, dessert-leaning coffee cocktail built around kopi O, roasted barley bourbon and pumpkin. B.T.B (Bean to Bar) (S$26++) is one for kombucha lovers and lighter drinkers: bourbon meets cacao nib kombucha for an earthy, gently fizzy pour with a restrained sweetness, and it is also available without alcohol. Dopa? Dopa! (S$26++) goes richer and more indulgent, combining salted caramel V.S.O.P., black tea and pistachio kunafa beneath a creamy top layer that makes it feel almost spoonable.
At night, the mood turns distinctly Singaporean with Reclaimed Sling 3.0 (S$27++), a sharper, cleaner evolution of the Singapore Sling using No. 3 Gin; and Pine-Dustry (S$26++), a spirited closing number with tequila, white wine reduction, coconut and a pineapple tart that pays tribute to the local bar trade itself.
