The St. Regis Singapore is welcoming October with a month-long celebration worthy of World Champagne Day. From now until 31 October, the hotel’s dining destinations come alive with champagne woven into every moment, from an exquisite five-course pairing dinner at Sophia to a dreamy afternoon tea, playful cocktails, and the hotel’s cherished evening sabrage ritual.
At Sophia, Chef de Cuisine Angelo Sergio has crafted a five-course journey known as the Ruinart Table (S$298++ per pax) that lets each ingredient speak for itself. The evening opens tenderly with a crab chiboust layered with pulled Alaskan king crab, burrata foam and salmon roe, before sliced Robbins Island Wagyu arrives dressed in balsamic truffle vinaigrette with candied kalamata olives and shaved truffle. A champagne infused risotto of aged Carnaroli rice, enriched with rock lobster and Kaluga Queen caviar, leads into seared black cod alongside a raspberry vinegar caponata, potage parmentier and shellfish oil. The night closes on a graceful note with champagne mousse, pear compote and almond sablé, each course paired with a different Ruinart cuvée, including the R de Ruinart Brut NV, Ruinart Rosé NV, Ruinart Blanc de Blancs and the rare DOM Ruinart Blanc de Blancs 2010.
For those who prefer a lighter iteration, The Tea Room’s Bubbles & Pearls Afternoon Tea (S$95++ per person) brings together two of life’s classic indulgences, champagne and caviar, in a spread that feels both playful and refined. Guests can savour Foie Gras Buckwheat Blini with A&K Caviar and a Tuna Tartare & Osetra Caviar Tartlet, while champagne finds its way into sweets like the Ruinart Champagne & Granny Smith Gâteau and Champagne Raisin Scones, all served with a welcome glass of R de Ruinart Brut champagne.
Over at The St. Regis Bar, a trio of champagne cocktails capture the same spirit of celebration, from the bright Golden 75 (S$26++) to the fruity Belle Rose (S$26++) and the elegant Grand Royale (S$26++), each one a small toast in itsself. The festivities will reach their high point on 30 October at Jack’s Club, where a three hour Ruinart package at S$98++ per person pairs free-flowing champagne with live jazz music and DJ sets late into the night.

And for those who simply want to feel the magic of the Maison in a single sip, the Caviar and Champagne Pairing Experience offers 10g of Kaluga Queen Osetra Caviar with a glass of R de Ruinart Brut at S$88++, available across all establishments in the hotel. It is a fitting backdrop to the hotel’s beloved nightly ritual, the Champagne Sabrage at the Grand Staircase, a tradition that has long marked the turn from day into evening with a touch of theatre and warmth.
